1 / 2 stick (4 tbsp.) Butter
32 large stone crab claws, chilled
1 lemon cut into wedges
1. Put claws intact in a steamer basket and set steamer pot of boiling water over high heat. Cover and cook until everything is hot, about 5 minutes.
2. Meanwhile, melt the butter in a saucepan, being careful not to cook. Remove from heat. Transfer to small serving bowl.

To serve two
Ingredients
2 tablespoons tablespoon honey
1 tablespoon water
1 vanilla bean 6 inches (I prefer Mexican)
2 or 3 strips lemon zest
1 branch lemon thyme (or any other thyme)
8 ounces fresh or other green-skinned figs Calimyrna
Method:
1. Rinse the figs and a pinch stems. Cut them in half and set aside.
2. Split the vanilla bean in half lengthwise and cut each half into 2 or 3.
3. In a small saucepan, Mix honey, water, vanilla bean and lemon zest on low flame. Stir to dissolve the honey and extinguish the fire. Add the figs, gently throw in honey mixture, and let them marinate, covered, for one hour.
4. After one hour, add the lemon thyme. Reduce heat to low and let Gently simmer the figs 30-40 minutes, turning them carefully so they do not fall apart but well done. Remove pan from heat and let cool at room temperature.
5. You can eat the figs now if you want, but they are even better if you leave them overnight to absorb the vanilla and syrupy lemon juice infused they exuded. To serve, divide the figs between two bowls and spoons of the syrup pink on them. Serve with Greek yogurt, of course, and coffee. Very dark.
