How coffee beans become again?

I grind my beans just before brewing, to a fine powder. I use the drip method, hot water poured over coffee in a filter in a cone. When I take the cone off the pot after brewing and put aside some of the reasons for re-cooling the beans again, with the crest. What kind of molecular magic happening here?

Maybe you do not grind the beans???
